Why I Love Spanish Rice and Beans

My first job was in the kitchen at a Mexican restaurant and a tequila bar. It was a great first job, mostly because of all the good food I ate.

Firstly, there were so many new things to try! So working there I never got tired of Mexican food in general.

Consequently, the best dish I ever ate was the simplest. Thus, the classic rice and beans was my favorite dish for its simplicity.

It never let me down and I was never bored.

I have fond memories of working late and secretly eatingMexican rice and beansbetween the serving tables. Luckily my boss never caught me!

That's why I've been trying to cook this delicious dish ever since. Finally, I think I finally found something that comes pretty closeauthentic mexican rice and beansyears ago with this recipe.

Mix rice and beans

The first thing I always do with my rice and beans is mix them together instead of keeping them separate. The spices and tomato flavor of the rice should be paired with the creamy, dense beans.

There was no way to tell these two apart when creating this recipe! The beans are simmered in the parsley and spices and then mixed with the rice for a very easy way to create exactly what I was looking for. In addition, it will make it even easier to prepare the dish, since everything fits in the same pan.

Above all anything that makes cooking easier is always a win for me!

Which type of rice is best?

So let's talk about rice for a moment.

For example, I tend to stick with regular white rice because it absorbs a lot of the spices and other flavors in the dish. There really is no need to get too crazy about expensive or difficult-to-cook rice.brown riceit also works great in this recipe and is considered healthier (which is always a little bonus).

But maybe you love basmati rice or wild rice is your favorite. Most importantly, whatever type of rice you really like (or maybe just whatever you have at home!), try it!

Finally, don't think too much! You really can't go wrong with most types of rice; so don't be shy about using regular white rice, it will work well for this recipe.

Second, just grab the can opener, drain the juice, quickly rinse the beans, and you're done.
